I read about these cookies on the internet and couldn't get them out of my mind. I finally made it to the grocery store today and made them tonight. Alot of them - the photo represents about 1/2. ;-) You just substitute the eggs in a chocolate chip cookie recipe with a 16 oz can of pumpkin. Mmmmm! Someone else recommended substituting the eggs with bananas... that's next on my list for certain. (I love chocolate and fruit) Bonus is that with no eggs you can eat the batter without salmonella or whatever it is you are supposed to be afraid of when eating raw dough... I added in some butterscotch chips but honestly the chocolate are the best flavor combo with the pumpkin.

It's raining here, only our 2nd rain in about 6 months plus... we were in the 90s only a week ago, so the cool rainy weather feels really nice. Obviously it must be pretty amazing to get me to BAKE??? I know, right? However Bailey most definitely disagrees. She rings her bells to go out the back door and then looks up at me in pure horror when she realizes it's raining. She HATES it. It's so dramatic as to be hysterical. If I am walking her on a leash in the rain she tries to get me to pick her up so she can be safe under the umbrella. The boys Bogey and Dylan are able to man up and go do their business with far less rain caused drama.
I had the day off and as usual that means running errands and doing things I can't do or am too tired to do when trimming. Today that included buying gas for less than $2. Whohoo! I actually filled my fossil fuel oinking V8 Touareg for less than $50 today! I honestly never thought I would see gas for less than $3 again. In fact Mario and I had a bet that it would get to $3.50 by October. That was a dollar less than it was at the time of the bet (summer). That is the best bet I've ever lost.
I'm working tomorrow and we're supposed to be getting more rain, but that's ok. The mud is a bummer but the hooves are softer and that makes my life much easier. My back has been acting up so this is definitely a good thing.
Lakers are 11 and 1 or so... Mario is pretty stoked. :o)

The cookies look good and so do the Lakers. Minnesota doesn't seem to be fairing quite so well these days.
